  1. Humus with Maize Tortillas

Method:

  • Soak chickpea for at least 8 hours and pressure cook it.
  • Grind chickpea into a thick paste.
  • Heat oil, sauté chopped garlic and add chickpea paste and salt. Mix it for 2 – 3 minutes. Hummus is ready.
  • Make maize flour dough adding salt, chili flakes, and add oil to it.
  • Roll maize flour into a sheet and bake it in the oven for 10 -12 minutes at 180 o C or roast it on tava till it becomes crisp.
  • Cut the tortillas into equal pieces and serve with hummus.

Method:

  • Grate paneer and other vegetables. Sauté the vegetables and paneer in a pan without oil. Add salt, chili powder, garam masala, and mix the stuffing.
  • Make soft dough out of ragi flour. Roll into a chapatti and roast it on both the sides like chapatti.
  • Apple green coriander chutney on one side of chapatti. Sprinkle some chaat masala and put the stuffing on a roti. Roll the chapatti, apply butter on the outer side, and roast on a pan.
  • Cut into half and serve the hot nutriveg roll.

  • Add grilled chicken, salt, soya sauce, and vinegar. Add little water so the sauces quote the chicken and vegetables.
  • Garnish with chopped spring onion greens and serve hot.

    • You can use a combination of Mufa and Pufa type of oil . This is true not only in case of weight loss , but for a healthy heart as well.

      Mufa oils include - groundnut oil , mustard oil , olive oil

      Pufa oil includes - all vegetable oils like rice bran oil , sunflower oil , safflower oil , cotton seed oil , etc .

      Ideally you should mix 1 type of mufa with 1 type of pufa oil . if you dont like the blended taste , you can keep these 2 oils seperately , and use them alternately for your vegetable preps .

      saturated fats like (SFA) - butter , ghee , coconut oil can be taken 1 - 2 tsp in a day . the quantity depends on your total oil consumption.

      The ratio OF MUFA :PUFA :SFA in your daily routine should be 1:1:1

      yes you can use these flours for roti . both oats and whole wheat flour are equally good and nutritious . oats flour will have slightly higher fiber content , but they are almost similar in nitrition.

      They are healthy carbs . complex carbs and rich in fiber too. the resistant starch in maize works as a fiber and hence most of the carb is excreated from the body without being absorbed.
