Fruity Potato Pudding

This fruity potato pudding is an excellent snack for kids in growing phase. It also helps those who keep participating in sports events and marathons. This pudding serves as an perfect pre-event meal for those in sports.

Fruity Potato Pudding

Ingredients: (For 4 serves )
• Boiled potato (grated) – 250 Gms
• Ghee- 2 Tb sp.
• Sugar- 150 Gm
• Pomegranate- ½ medium sized
• Apple-1/2 medium sized
• Soaked almonds – 10 no.
• Pista – 10 no.
• Cardamom pwd – 2 pinch
• Kesar – 2-3 leaves

Method:

# For Filling –
Take Apple and pomegranate, mix some cut almonds and pista.

# For covering –

1] Boil potatoes and grate them.

2] Add these  potatoes and ghee in a microwave safe bowl and microwave for 15 mins .
3] Transfer this mix to a non stick pan and heat for 5 more mins till the potato turns Pink in colour.
4] Then add sugar and Cardamom powder.
5] Form balls of this mixture and stuff the above mentioned filling

6] Present it in a plate or Martini glasses.
