Koshimbir / Kachumber salad (without curd)

I have lived in Maharashtra for 23  years, and I have a special liking for this lovely looking koshimbir / Kachumber salad. Basically a Maharashtrian salad recipe, an important part of the Maharashtrian thali. Here is the recipe of this colorful koshimbir/ kachumber salad.

Preparation time 10 minutes
Cook time

Koshimbir / kachumber salad  : –

Ingredients –  (Makes 5-6  serves )

– Cucumber – 1 small chopped

– Carrot – 1 small chopped

– Tomato – 1 small chopped

– Beetroot – 1/2 cup chopped

– Cabbage – 1/2 cup shredded

– Onion- 1 small chopped

– Salad leaves – 1/3 cup  chopped

– Coriander leaves

– Chaat masala, red chili flakes, roasted jeera powder

– Salt and lemon juice to taste

( You can add hung curd to this recipe too, If you wish to, add 1 cup hung curd.)

(The original recipe consists of roasted groundnut powder, but I avoid it for weight loss purpose. You can use it in limited quantities if you wish)

Procedure –

Mix all the above-mentioned ingredients in a pan and this colorful koshimbir / kachumber salad is all yours to enjoy.

  • Hi,
    One thing want to ask is on a second day I always having sever headache in the evening. Even though I save some portion of potato-apple salad for evening so I don't go extreme hungry. i did GM diet in past very regularly N i was having same problem. How to deal with it?
    - As per your soup recipe for 4th day - It involves butter so is that correct?
    - On 5th and 6th day can I have mung beans without any oil tadka and lauki chanadaal subji without oil tadka?

    • i did GM diet in past very regularly N i was having same problem. How to deal with it?
      Ans - migrane / headache occurs when you remain hungry .. try to eat every 2 hours on every day to avoid getting in the hunger zone.

      – As per your soup recipe for 4th day – It involves butter so is that correct?
      Ans - yes

      – On 5th and 6th day can I have mung beans without any oil tadka and lauki chanadaal subji without oil tadka?
      Ans - yes without tadka

    • day 1 - no banana. you can have a few grapes. chickpea is allowed only day 5 and 6 .
