Fruity Potato Pudding
Ingredients: (For 4 serves )
• Boiled potato (grated) – 250 Gms
• Ghee- 2 Tb sp.
• Sugar- 150 Gm
• Pomegranate- ½ medium sized
• Apple-1/2 medium sized
• Soaked almonds – 10 no.
• Pista – 10 no.
• Cardamom pwd – 2 pinch
• Kesar – 2-3 leaves
Method:
# For Filling –
Take Apple and pomegranate, mix some cut almonds and pista.
# For covering –
1] Boil potatoes and grate them.
2] Add these potatoes and ghee in a microwave safe bowl and microwave for 15 mins .
3] Transfer this mix to a non stick pan and heat for 5 more mins till the potato turns Pink in colour.
4] Then add sugar and Cardamom powder.
5] Form balls of this mixture and stuff the above mentioned filling
6] Present it in a plate or Martini glasses.
