The humble millet can be a valuable addition to your healthy breakfast plate. Whole grains have always been on our food list. But there is more to it than just our regular rice, corn and wheat. Millets are highly nutritious but also a forgotten wholegrain in recent times. Millets are versatile hence there are many delicious recipes that can be prepared with them.   • Bajra Uttapam

This healthy recipe is prepared by combining bajra with besan / Mung dal, curd and salt. The overnight soaked mixture is ground into a smooth batter using some water. To this batter, you can add toppings like onion, mint leaves, green chillies, cumin seeds and capsicum. Now spread this mixture on a preheated tawa with homemade ghee and cook till golden brown and a thick hot pancake is ready to be served!

  • Ragi Parantha with Stuffed Paneer

This high protein recipe is quick and simple to prepare. It makes a great lunch or breakfast option for weight loss and diabetic breakfast. To make this parantha, prepare dough using ragi flour, salt and whole wheat flour. Keep it aside till you prepare the paneer filling. Mix grated paneer, mint leaves, green chillies, cumin powder and salt. Stuff a portion of mixture in the center of the dough and roll it nicely according to your preferred thickness. Add ghee on the tawa and flip till both sides get cooked properly. Serve hot with curds or sauce.

  • Foxtail Millet Upma

This recipe makes for a wholesome breakfast which is made with minimum ingredients. To prepare this, add mustard seeds, asafoetida and split urad dal to hot ghee in a preheated pressure cooker. Saute onions, carrots, beans, ginger, drained foxtail, millet, curry leaves, salt, turmeric powder and water. Cook this for about three to four minutes. Serve hot.

  • Mixed millet Roti

This roti is prepared from ragi, bajra, jowar and whole wheat. For preparing this recipe, mix bajra, ragi, jowar, salt and wheat flour with a little quantity of water as well as a teaspoon of oil, sesame seeds , jeera, grated ginger and very finely chopped green chilly. Knead this mixture till smooth. Now roll them and cook on an iron skillet. Serve with chutney or curds.

  • Tomato and Jowar Cheela

This recipe is a perfect choice of breakfast or snack especially for PCOD patients as it is gluten- free. To prepare this, combine whole wheat flour, jowar flour, tomatoes, green chillies, onions, salt, coriander leaves, red chilli powder and water to prepare the cheela batter of pouring consistency. Now pour this batter in a circular motion on a heated tawa. Cook this on a low to medium flame. Serve with chutney

  • Bajra Khichdi

This satiating dish is gluten- free and a wholesome option for PCOD and weight loss. To prepare it, pressure cook the overnight soaked bajra, moong dal, turmeric and green chillies to approximately 4-5 whistles. Chop veggies of your choice and cook this along with the onions on a kadhai. Add garam masala, red chilli powder, salt and coriander powder. Now add this mixture to the cooked bajra and dal mixture. Blend everything together and again cook for 3 to 4 minutes. While serving add a dash of lemon juice and enjoy it with a mango pickle.

  • Rajma and sprouted ragi cutlets

This protein-rich filling snack is best for weight loss. To make it, you will need to soak ragi overnight and then leave it by covering with a damp muslin cloth for an entire day. This will help sprout the ragi. Pressure cook the potatoes and rajma. Now grind the sprouted ragi with coriander leaves and green chillies to make a coarse paste. Add this paste to the mashed potatoes and rajma mixture. Add the spices like dry mango powder, coriander powder, turmeric, garam masala and salt. Now prepare round cutlets and coat them with bread crumbs or semolina. Dip them one by one in the milk and fry on a tawa till golden. Serve with sauce or chutney.

  • Foxtail and Horsegram millet idli

This delicious recipe is nutritious and extremely filling and makes an excellent option for PCOD patients. To make this, grind overnight soaked urad dal methi seeds mixture and millet horse gram into a smooth paste by using water. Prepare a uniform batter and ferment for about 8-10 hours. Once it gets fermented, put it on the idli steamer plates. Steam on high for about ten minutes and turn off the heat. Pair this tasty dish with coconut chutney and vegetable sambhar.

  • Jowar methi ragi thalipeeth

This wholesome recipe can make a tasty diabetics and PCOD breakfast recipe. To make this, mix jowar flour, besan, ragi flour, cumin powder, coriander powder, green chillies, onions, turmeric, salt as well as chopped methi leaves with lukewarm water and form a firm dough. Place a portion of flattened dough at the centre of the butter paper and poke three holes. Transfer this on a preheated skillet and cook by flipping on both the sides. Serve hot with pickle as well as curds.

  • Veg Jowar Upma

This is a great millet recipe to add in your regular diet. To make it, pressure cook overnight soaked jowar pearls with salt and water. The jowar pearls should have a chewy texture. Steam all the vegetables and keep aside. Now sauté onion, ginger, garlic till translucent. Add the peanuts and again sauté for a few minutes. Then add all the steamed vegetables, jowar, black pepper, turmeric powder and salt. Cover this for about 5 minutes. Serve hot by drizzling lemon juice over it. Detailed recipe here.
