French beans and coconut salad

If you are bored of eating the same old cucumber and tomatoes in the name of salad, here is a quick, tasty savior salad to change your taste for good. This french beans and coconut salad is not only easy to make but full of fiber and very very low in calories to aid your weight loss. It also keeps you full for longer.

Who says That you can enjoy rains only with pakodas and samosas. Here is a super healthy and steaming hot salad which can be enjoyed on a rainy day. this French beans and coconut salad is so simple to make and can be arranged quickly. So if you are someone who does not like spending long hours in the kitchen, Then this French beans and coconut salad is your soul mate.

Preparation time 10 minutes
Cook time 2 mins

French Beans and Coconut salad  : –

Ingredients –  (Makes 2 serves )

– French Beans  – 1oo grams  cut in small julienne diagonally (refer the picture )

– Coconut – 1/4th  coconut   (grated).

– Onion- 1 big (chopped).

– Coriander leaves for dressing (optional

–  Oil – 1/2 tsp for cooking

– salt, black pepper powder, and lemon to taste

– Curry leaves and mustard seeds for seasoning

Procedure –

  • In a pan add 1/2 tsp oil and let it heat. Add curry leaves and mustard seeds for seasoning.
  • When the mustard seeds start to crackle, add onions and beans. Then add salt to taste and cover this with a lid. Cook for 2 mins. ( let the beans soften a bit, make sure you do not cook it for long, the half cooked beans tastes better than the fully cooked ones . )
  • Switch the gas off. Add grated coconut and lemon juice. stir well and empty the mix in a serving bowl, garnish with coriander leaves.
  • Enjoy this hot salad. Specially goes well in rainy and winter season

  • French beans are Indian vegetable or it comes from other country ? I didn't found it in many towns .

      yes french beans are very popular and available almost every where . it is called shravan ghevda in local hini and marathi .. so may be you can ffind it with this name .
