Ingredients for coconut sandwich (1 serve)
- 2 slices of brown bread / multigrain bread / broken wheat bread
- ½ cup grated fresh coconut
- ½ cup hung curd
- Salt and sugar to taste
- 1 tsp olive oil /groundnut oil
- Curry leaves 5- 8 nos.
- ½ tsp Mustard seeds
- 1 green chilli
Instructions for coconut sandwich
Step 1: Mix grated coconut with hung curd. (If you don’t have hung curd ready, just use a strainer, and put curd on it and let it rest for 10 mins , the excess water will automatically drain out and the thick curd that remains on top of the strainer can be used.)
Step 2: Add salt and sugar and season this mixture.
Step 3: Fill this stuffing between 2 slices of bread (from bread choices mentioned above)
Step 4: Grill / microwave, or you can simply roast it on tava / non-stick pan. And serve this coconut sandwich hot.
